Low Histamine Cooking Methods
Cooking is an important part of keeping your food low-histamine.
Be sure to cook from frozen using an air fryer or Instant Pot. Do not slow-cook or smoke.
If using an Instant Pot, do not cook for more than 1.5 hours. Do not cook with bones if you are ultra-sensitive.
If you’re air frying, drain any rendered fat because it contains high levels of histamine.
We recommend using an outdoor air fryer like the Ninja Woodfire. Cooking meat indoors can significantly lower air quality, so you may be sensitive to that.
The Woodfire comes with a non-stick basket. We recommend ditching that for a compatible stainless steel grate (see image) so you can avoid PFAS (forever chemicals). It is also easier to clean.

Why Choose Low-Histamine Meat?
Histamine intolerance occurs when individuals react negatively to histamine in foods, often due to chronic health issues.
While meat is beneficial for managing and healing diseases, those sensitive to histamine may struggle with meats from the grocery store or local farms. Most meats are aged, often without being labeled as such, and stored above freezing, leading to higher histamine levels.
Low-histamine meat, which is unaged and frozen immediately after processing, can reduce adverse reactions and help sensitive individuals benefit from meat’s low-inflammatory, nutrient-rich properties.

Help Me Maintain This Resource
Hi, my name is Jonathan and I’ve been dealing with histamine intolerance for years. Like many others, I rely on low-histamine meat to manage my condition.
I started this website to keep our community up-to-date with the latest low-histamine meat sources.
This resource is free, but it does cost money for me to run. It would also be great to expand this more! Your support for this project is greatly appreciated.
